Roasted vegetable and Chevrotin tart

Ingredients - for 4 persons

  • 1 round portion of pizza dough
  • 100g Chevrotin cheese
  • 1 red onion
  • 2 cloves of garlic
  • 1 yellow pepper
  • 1 red pepper
  • 200g small tomatoes
  • 1 aubergine
  • 1 courgette
  • 2 bunches of basil
  • 1 tsp. chopped rosemary
  • 4 tbsp. olive oil

Preparation

  1. Rinse and dry the vegetables without peeling them. Peel the onions. Cut them all into large pieces and arrange on a baking tray covered with baking paper.
  2. Add the non-peeled cloves of garlic, olive oil and rosemary. Add salt and pepper.
  3. Roast the vegetables in a hot oven at 180° for around 1 hour, turning from time to time.
    Set aside to cool.
  4. Arrange the vegetables in the centre of the dough, and fold the edge up over the filling. Place in the refrigerator for 30 minutes. Bake in an oven at approx. 180°C for 45 minutes.
  5. On removing from the oven, sprinkle over the Chevrotin shavings, and the chopped basil. Finish off with a drizzle of olive oil and fleur de sel.
