Gazpacho revisited with Chevrotin soldiers

Ingredients - for 4 persons

  • 4 large, juicy tomatoes
  • 1 fennel
  • 100g Chevrotin cheese
  • 2 cloves of garlic
  • 8 tbsp. olive oil
  • 200ml tomato coulis
  • 1 bunch of basil leaves
  • 1 tbsp. sherry vinegar
  • ½ tsp. Espelette pepper
  • 4 slices country bread
  • Cumin seeds, aniseed, fennel seeds, salt and pepper

Preparation

  1. Gazpacho: Wash the vegetables, cut up the fennel and the tomatoes into pieces. Blend for a long time, and then add the other ingredients. Pass through a sieve. Add a bit of water if the mixture is too thick. Keep in a cool place.
  2. Chevrotin soldiers: Spread Chevrotin over the bread, sprinkle over the seeds, a few drops of olive oil and place under the grill for 4-5 minutes.
  3. Serve the soup well chilled with the Chevrotin soldiers.
