Herb-marinated Reblochon with pesto-style nuts

Ingredients - for 4 persons

  • 1/2 Reblochon cheese
  • 1 clove of garlic
  • 60g nuts
  • 1 bunch fresh coriander
  • 1 bunch parsley
  • 1 tsp. cumin seeds
  • 70ml olive oil
  • 2 tsp. balsamic vinegar
  • Salt & pepper

Preparation

  1. Mix the herbs (with the stalks removed) with the nuts, the clove of garlic (with the sprout removed) and the olive oil.
  2. Add the balsamic vinegar, salt, pepper and cumin.
  3. Cut the Reblochon into cubes and leave to marinate in the pesto overnight.
  4. You can serve as is as a tapas, melted on toasted bread, or on pasta, pizza, etc.
