Kofta skewers with Beaufort

Ingredients - for 4 persons

  • 2 brown onions
  • Olive oil
  • 1 lemon
  • 1 clove of garlic
  • 1 bunch of coriander
  • 150g Beaufort cheese
  • 500g minced veal meat
  • Salt & pepper

Equipment: 4 large wooden skewers

Preparation

  1. Peel the onions, chop them quite finely, then fry them in a little olive oil in a frying pan for 2 to 3 minutes. Place them aside in a bowl.
    Remove the zest from the lemon and chop it up. Peel and chop the garlic, then chop up the coriander as well. Cut the Beaufort cheese into small cubes.

  2. Mix the onions with the meat, garlic, coriander, lemon zest, Beaufort, salt and pepper. Take a skewer and with your hands, form a tube shape of the seasoned meat around it. Flatten the meat slightly, and then continue the same process for the rest of the skewers.

  3. Add salt and pepper to the kofta skewers, rub them lightly with oil and cook them for 5 to 6 minutes in the frying pan, but not for too long, to prevent them from drying out.

  4. Serve hot, drizzled with a few drops of lemon and olive oil.

    Tip: to ensure the meat sticks properly to the skewer, and that it does not fall apart while being cooked, press it down very firmly. If you like, you can coat the skewers before cooking in a seed mixture of sesame, breadcrumbs and chopped raisins.
    Accompaniment: offer quite a full-bodied red wine, such as a Moroccan or Lebanese wine.
    Serving suggestion: serve the skewers with some semolina.
