Chevrotin tuiles

Ingredients - for 6 persons

  • 60g Chevrotin, grated
  • 60g ground hazelnuts
  • 60g flour
  • 1 tbsp. fir honey
  • 2 egg whites
  • 60g melted butter

Preparation

  1. Mix together the grated Chevrotin, ground hazelnuts, flour, fir honey, egg whites and melted butter.

  2. Leave in the refrigerator for 1 hour.

  3. Add salt and pepper to the dough.

  4. Shape it around the lower part of a bottle and leave it to cook at 220°C until lightly browned.

    A good pairing of wine: Chevrotin cheese goes well with the smoothness of a Crépy Chasselas or the subtlety of an Apremont or a white Jongieux.
    Bread that goes well: Simply a country loaf or slices of a good rye with raisins.
    To get the most out of your Chevrotin, take it out of the refrigerator at least 30 mins before consuming.
