Mix together the grated Chevrotin, ground hazelnuts, flour, fir honey, egg whites and melted butter.
Leave in the refrigerator for 1 hour.
Add salt and pepper to the dough.
Shape it around the lower part of a bottle and leave it to cook at 220°C until lightly browned.
A good pairing of wine: Chevrotin cheese goes well with the smoothness of a Crépy Chasselas or the subtlety of an Apremont or a white Jongieux.
Bread that goes well: Simply a country loaf or slices of a good rye with raisins.
To get the most out of your Chevrotin, take it out of the refrigerator at least 30 mins before consuming.
