Arrange the Tome des Bauges on the shortcrust pastry base in slices, covering the surface of the base.
Place thin slices of tomatoes over this layer of cheese.
Add the Herbes de Provence.
Place in the oven (thermostat 5/6) for 40 minutes.
To be eaten hot or cold. You can also place some slivers of ham onto the tomatoes before baking them.
