Summertime Reblochon pork rolls

Ingredients - for 6 persons

  • 12 thin slices of pork fillet
  • 1 farm-produced Reblochon
  • 2 tbsp. olive oil
  • 1/2 glass Marc de Savoie
  • 150g sundried tomatoes in oil (or 1 fig per roll) (or 1 prune)
  • 250ml chicken stock
  • 50g crème fraîche
  • Thyme, bay leaves, basil, salt, pepper.

Preparation

  1. Scrub the rind of the Reblochon and cut it into fine slices.
  2. Place 1 or 2 slices of the Reblochon on each slice of pork fillet, as well as 2 slices of tomato.
  3. Roll it to create a sealed roll, and tie with string.
  4. Heat the olive oil, and brown the rolls until golden brown, on all sides. Season.
  5. Drizzle with Marc de Savoie and flambé. Moisten with the stock.
  6. Add thyme, bay leaves and basil, and let it simmer, covered, for 20 minutes.
  7. At the end of the cooking time, add the cream to bind the sauce.
