Tomme de Savoie cannelloni with aubergine caviar

Ingredients - for 4 persons

  • 16 slices of Tomme de Savoie cut thinly (3 to 4mm thick)
  • 2 aubergines
  • 4 peeled shallots
  • 4 cloves of garlic
  • 5 tbsp. olive oil
  • Sea salt and pepper
  • Parsley and chives

Preparation

  1. Wash the aubergines, remove the ends, and then halve these vegetables lengthwise.
  2. Place in an ovenproof dish, with the unpeeled garlic and shallots. Add salt, pepper and cover with some foil. Place in the oven for 45 minutes at 180°.
  3. A few minutes before the end of the cooking time, add a dash of olive oil.
  4. Once cooled, scoop out the flesh of the aubergines, the garlic and shallots and place the mixture in a container. Add finely chopped parsley and chives to make a caviar.
  5. Place the caviar on the thinly sliced slices of Tomme and roll up to create cannelloni.
  6. Serve immediately.
