Millefeuille of Tomme, ham and Savoie apples, with a liquorice spear

Ingredients - for 4 persons

  • 200g whole milk Tomme de Savoie, cut into thin slices
  • 2 “Golden” Savoie apples
  • 4 slices of non-smoked Savoie ham, cut into thin slivers
  • 1 stick of liquorice


  1. Score the stick of liquorice lengthwise and vertically, without peeling it, so as to create little appetiser sticks approximately 8cm long.
  2. Wash and cut the apples with their skin still on, very thinly widthways.
  3. Place a slice of ham on top, then a slice of Tomme cheese and continue until you’ve created a 4-layer stack.
  4. Cut the edges into a square and cut into quarters. Insert the liquorice stick.
  5. Place the millefeuilles on an appetiser dish. Serve cool.
