Tomme de Savoie veal tartare

Ingredients - for 4 persons

  • 200g Tomme de Savoie cheese
  • 200g minced or finely sliced veal
  • 2 avocados
  • 5 shelled nuts
  • 2 tbsp. nut oil
  • 3 tbsp. balsamic vinegar
  • 5 finely chopped white button mushrooms
  • A few spring onion or chive flowers


  1. Slice the veal into very small pieces or ask your butcher to do this for you.
  2. Cut the avocado and the Tomme de Savoie into very small cubes. Snip the stalks of the spring onion or chive flowers. Then thinly slice the mushroom and break the nuts into small pieces.
  3. Arrange the minced veal, avocado and Tomme de Savoie cubes, pieces of spring onion, mushrooms and nuts in a dish.
  4. Strip off the spring onion flowers and add to the rest. Add salt, pepper, then mix all together and pour two to three tbsp. of olive oil over it.
