Beaufort French toast

Ingredients - for 6 persons

  • Around a kg of stale bread
  • 750ml milk
  • 50g butter melted in a bain marie
  • 250g Beaufort cheese, grated
  • Salt, pepper and nutmeg
  • 4 eggs
  • 2 tbsp. crème fraîche
  • 150g lardons


  1. Heat up the milk, remove the crusts from the bread, place the inside of the bread broken into small pieces in a bowl and pour the boiling milk over it. Cover and leave the bread to absorb the milk for 15 minutes.
  2. In a bowl, beat the eggs with the cream, salt, pepper, nutmeg, melted butter and Beaufort cheese.
  3. Turn on the oven to thermostat 8 or 250°C
  4. Grease an ovenproof dish, mix together the two mixtures, and pour the combined mixture into a dish. Top with the lardons and the rest of the Beaufort.
  5. Cook for 30 minutes, serve hot.
