Cut 100g of Beaufort cheese into small cubes. Roughly combine the Beaufort cubes with 10g flour.
Preheat the oven to 150°C, preferably in the fan position. Cover a baking tray with some greaseproof paper. Place 4 small tart circles 6cm in diameter over it, and generously garnish each one with a generous tablespoon of Beaufort. Then gently remove the circles, in order to get small discs 1/2cm thick. Place the end of a wooden skewer into each one, gently push it in and then sprinkle over some Beaufort to hide it.
Place the baking tray into a pre-heated oven, and leave to cook for 15 minutes at 150°C.
Once cooked, let the Beaufort lollipops cool down before serving them as an appetiser, paired with an Apremont for example.
Tip: For presentation, stick the lollipops into a glass container filled with polenta.
