Abondance tart

Ingredients - for 6 persons

  • 1.5 kg potatoes
  • 400g Abondance cheese
  • 300g smoked streaky bacon
  • 400g eggs
  • 200ml milk
  • 300ml crème fraîche
  • Salt, pepper, nutmeg

Preparation

  1. Place the shortcrust pastry into a sponge cake tin.
  2. Peel the potatoes, cut them into thin slices, wash them, blanch them and drain.
  3. Cut the Abondance and streaky bacon into small cubes and scatter into the bottom of the moulds.
  4. Then garnish with a layer of potato, and continue alternating the layers until reaching 1cm from the edge of the tin.
  5. Break the eggs into an ovenproof dish, add the milk and crème fraîche and beat together. Season with salt, pepper and the nutmeg and then pour the mixture into the tart case until it is covered. Cook on medium heat (220°C), for 40 to 50 min.
