Reblochon de Savoie stuffed courgettes

Ingredients - for 4 persons

  • 1/2 Reblochon cheese
  • 4 large courgettes
  • 200g cooked rice
  • 3 tbsp. crème fraîche
  • 1 bunch of chives
  • 1 bunch parsley

Preparation

  1. Let the whole courgettes cook in boiling, salted water for 8 mins.
  2. Let them cool down under cold water, then gently slice off the top of each one.
  3. Scoop them out and keep the flesh aside.
  4. Chop finely.
  5. Mix the courgette flesh in a bowl with the cooked rice, cream, chopped herbs, 1/3 of the Reblochon cut into small pieces, salt and pepper.
  6. Stuff each courgette with the mixture, then divide up the rest of the sliced Reblochon over them.
  7. Leave the courgettes to cook for 10 mins in a preheated oven, thermostat 
  8. Serve piping hot.
