Savoie-style Abondance fondue

Ingredients - for 4 persons

  • 400g Abondance cheese
  • 400g Beaufort cheese
  • 200g Emmental de Savoie
  • ½ bottle Savoie dry white wine
  • 1 clove of garlic
  • 1 glass of Kirsch liqueur (optional)
  • Nutmeg, pepper
  • 200g bread


  1. Rub a peeled garlic clove around the inside of the fondue pot.
  2. Grate the cheeses and put into the fondue pot. Pour the Savoie white wine over, generously covering the cheeses. Leave to simmer on a low heat, while continuing to stir with a wooden spoon, until the fondue becomes smooth and well mixed.
  3. Season with the pepper and grated nutmeg. Leave to cook for 5 minutes, stirring continuously.
  4. Place the fondue pot on its burner in the middle of the table.

Enjoy by dipping in pieces of bread at the end of a long fork
